Ingredients
Prep time 15 minutes; cook time 20 minutes; passive time 1 ½ hours
1 cup Warm Water, 110°F
2 tsp Active Dry Yeast
2 tsp Sugar
1 ½ cups Bob’s Red Mill Gluten Free All-Purpose Baking Flour
2 ½ tsp Xanthan Gum
1 tsp Salt
½ tsp Baking Powder
Cornmeal, for sprinkling
Easy Gluten Free Pizza
Makes 1 large pizza
Combine warm water, yeast and sugar. Stir well and set aside to proof. This will take about 5 minutes.
While the yeast is proofing, combine flour, xanthan gum, salt and baking powder the bowl of a stand mixer. Whisk well to combine.
When the yeast has foamed up, pour it into the flour mixture and mix well with a dough hook, until a dough forms.
The dough will be soft and slightly sticky. Cover with plastic wrap and allow to rest in a draft free place for 1 ½–2 hours, or until doubled.
Preheat the oven to 450°F. Line a baking sheet with parchment and lightly sprinkle with cornmeal. With wet hands, flatten and shape the dough to the pizza shape you desire. Spread it pretty thin, since it does rise a bit when baked. Top with your favorite toppings and bake for 20–25 minutes, or until the crust is golden and cheese is melted and gooey. Enjoy!
